Payes, also known as kheer or phirni, is a popular sweet dish common in the Indian subcontinent. It is mainly made with rice, milk and sugar, but its taste and variety can be enhanced by adding various ingredients to it. The history of payes is quite ancient and its introduction is seen in various cultures and occasions.
In ancient times, payes ("paysam" in Sanskrit) were a staple food and were served during religious ceremonies. In the Middle Ages, especially during the Mughal period, new techniques and ingredients were added to the preparation of payes, such as cardamom, raisins, saffron, cashews and pistachios. Different regions have their own characteristics of payes. For example, Sherpur's Chanar Payes is quite famous and is known as a traditional dish. It is made with milk, flour and sugar.
Payes is not just a sweet dish, it is an important part of various social and religious events. Payes holds a special place in Bengali culture and is served on various occasions including festivals, pujas, weddings, Eids, and Annaprashan.
So, Payes is a traditional and popular sweet dish, which holds an important place in various cultures and events. It is not just a sweet dish, but there is also a link between tradition and culture.

The Processing of Recipe
Step - 1
- First, I will wash the pulao rice well and put it on the stove to cook. Then, when the rice is cooked, I will remove it from the stove and keep it to one side.
Step - 2
- Now I will put a pan on the stove and pour liquid milk into it. After this, I will add sweets, powdered milk, cinnamon, cardamom and bay leaves to the milk one by one and stir well.
Step - 3
- After stirring for a while, I will add the boiled pulao rice to it and mix it well with the milk. Then I will keep stirring it for some time so that it does not stick to the bottom of the pan. When I see that the payas has thickened while stirring, I will remove it from the stove.
Step - 4
- This is how our tasty and delicious payas will be prepared. Now, in the vessel in which I will serve the payas, I will arrange the payas as I like and serve it to the guest.

Now I am determining the geographical location of the food I have prepared. Although this food is equally appreciated all over India and Bangladesh, but since I am from Bangladesh and this food is also known as a traditional food in our Narayanganj district and it has many names and nicknames here, I will pin the location of our Narayanganj district.

Me es muy grato ver la presentación de este postre tradicional de tu región y encontrar mucha similitud con un dulce tradicional de mi país llamado "arroz con leche", también hay otro parecido llamado "arroz con coco", se preparan mucho para la época de Semana Santa, pero igualmente se puede disfrutar en otra época del año que nos provoque prepararlo.

This is the first time I'm actually hearing there's a rice called polao and the texture of the rice id quite french. Seeing leaves in your meal makes it traditionally inclined. In my country, leaves add essence to the food.
