Yesterday's Eid al-Adha Celebration

People in Sfax know that Eid al-Adha isn't really complete without bazin bi qlaya. This dish brings the whole family to sit together and share a meal that means something special.
Making the qlaya is pretty straightforward. You take lamb pieces and boil them with some salt, pepper, and water. Once they're cooked through, you drain out the water. Then you fry the meat in olive oil along with lamb fat and the organ meat until everything gets golden and soft.
The bazin part takes a bit more work. You mix starch with water and cook it slowly. You have to keep stirring while adding warm water bit by bit. This keeps going until the mixture gets thick and smooth with a nice shine to it. A little olive oil at the end makes it perfect.
When it's time to eat, you put the bazin on a big plate and make a small well in the middle. That gets filled with honey. Around the edges, you arrange the qlaya meat. This whole dish really shows what Eid means in Sfax. It's about family, keeping old traditions alive, and enjoying food that tastes
