Hi everyone! Welcome back to my kitchen! Today, I’m going to show you how to make delicious Nigerian Jollof Rice the easy way! If you’ve ever got stuck in the kitchen wondering how to get that smoky, flavorful taste, don’t worry I’ve got you covered.
This recipe is simple, quick, and perfect. So grab your rice, tomatoes, and spices let’s get cooking!
Main content (0:30 – 1:45)
First, let’s blend our pepper mix. I’m using fresh tomatoes, red bell peppers, Scotch bonnet, and onions. Blend until smooth, that’s where the flavor begins!
Next, heat some vegetable oil in a pot, add sliced onions, and fry until golden brown. Then pour in your blended pepper mix and fry for about 10 minutes, this part makes your kitchen smell amazing!
Now, add your seasonings; curry, thyme, salt, stock cubes, and a bit of bay leaf. Stir well and pour in your washed rice. Mix everything together gently and allow the rice soaks up the pepper base.
Add water or chicken stock just enough to cover the rice. Cook on low heat, and cover the pot. Let it steam slowly. Don’t stir too much to avoid burn, that’s how we get that nice smoky Jollof flavor!
The end part (1:45 – 2:15)
Ok and that’s it, our delicious, Nigerian Jollof Rice is ready! Just look at that color and texture, so soft, tasty, and perfectly cooked. You can go ahead and enjoy it with any soft drink of your choice. Now, this is where I draw the curtain for today!
