Rainy Day Comfort: My Sinigang (Filipino Sour Soup) Recipe

Sinigang, or sour soup, is one of the Filipino dishes I was raised on. It has been one of the staple foods in household kitchens and restaurants , and even fast food chains such as Andoks. Sinigang is likewise available in a karenderia (small eatery) for a cheaper price. It is not just a meal. It is one of the old-time favorite comfort foods of the typical Filipino. What makes it unique is due to its tangy, sour , and mildly salty flavor.
Today, I want to share my simple and budget-friendly pork sinigang recipe with a little twist. Let us start!

Ingredients:
- A small amount of oil
- ¼ kilo pork meat, preferably with a little fat, or the lempo portion
- Pechay, or you can use cabbage
- 1 medium-sized onion
- 2-3 pcs. green chilli
- 5 pcs. okra
- 2 medium-sized eggplants
- 2 medium-sized tomatoes
- 1 pack of 11 grams of tamarind powder
- 1 Pork broth cubes (optional)
- salt and Seasoning (to taste)
- fish sauce or patis
Procedure:

- Begin by washing all the veggies and meat thoroughly. Slice pork into bite-sized pieces so that it will cook quickly.

- Grab your pot and drizzle in just enough oil. Get it nice and hot, then toss in those onions and tomatoes. Let them sizzle and soften up. You will know they are ready when they smell amazing and look kinda lazy in the pan.

- Put sliced pork in and keep sauteeing it, pour in a tablespoon of fish sauce into the meat to add a little salty, will make dish more delicious.

- When the pork looks pale gold, add about 5-6 cups of water until it boils. Turn the heat down to a lazy simmer and let it bubble away happily for 20-30 minutes, just until the pork gets that fall-apart tenderness.

- Go ahead and toss in the tamarind powder and cubes, give it a good stir, and let those flavors get to know each other... Stir well and taste the sourness. You can add more tamarind powder if you want it to be more sour.

- Give the pork a little poke, if it is tender enough to practically sigh when you touch it, you are good to go.

- Add the vegetables. Start the eggplant, then followed by okra, green chili, and let it cook for 3 minutes.

- Add the cabbage next and let it cook for about 3 more minutes, just until it is perfectly tender.

- Lastly, add salt and fish sauce to taste. To enhance the taste, you may include a small amount of msg. But it is optional.

- After all the ingredients are fully cooked, carefully move the dish to a serving bowl. Served hot, paired with rice.Best shared with your family.
Tips;
Usually, the standard procedure in cooking a sinigang recipe is to boil all ingredients right from the start. But I prefer to saute the tomato and onion, especially the pork, to eliminate the unwanted meat odors. You can also choose either pork, shrimp, or fish as your main ingredients in your sinigang. It depends on what your family prefers. I usually use pork because that's what my kid wants. What's great about this recipe is that it is budget-friendly. I spend around 200 pesos, or about 4 dollars, on this recipe. Practical and perfect for cold days, right?
