" Tuslob Buwa: The Brainy Exotic Dish of Cebu City, Philippines"

This isn’t your average food story. What if I told you one of Cebu’s most talked-about street foods starts with a pig’s brain sizzling in a pan? This is "tuslob buwa", a dish so bizarre, and yet so mouthwatering. If you just know, locals line up just to dip their rice into bubbling brain sauce. Sounds crazy? Maybe. But stick with me, because once you hear how it’s made, and why people are obsessed with it. You might just find yourself craving a taste of it, too.

In our city, Cebu City, Philippines, this menu originated and is now becoming popular. Why is it called “ tuslob buwa”? It is a saucy dish combined with garlic, onion, red chilli (if you want it spicy), slurry, ground pig's liver and brain. When the thick sauce boils and bubbles, that's the time you can start dipping. It’s most often enjoyed with “puso”... A rice packed in woven coconut leaves, perfect for dipping. In our place, you can find it almost in every corner. It’s the kind of meal where you just keep dipping ‘til you’re full. Mostly families or groups of friends who go for it because you can save a lot because this is being served as unlimited, meaning you can request a refill for as long as you want to eat, plus it comes with free 10 pieces of hanging rice. Imagine, you don't even need to buy additional dishes anymore.

I'll share with you our experience with my family last night when we visited the famous “Tuslob Buwa” Located at Mactan Business Centre, Lapu Lapu City, Cebu. It was the request of my youngest son. He told me that he would like to have “tuslob buwa” for our dinner. Most nights, he’s the tiny boss calling the shots on what to eat for dinner. He’s a picky one. It got me thinking… How come he likes this dish?

Here, let’s talk about how to get this dish ready,

The waitress has prepared our table. And place it with a pig's brain, sliced chili, garlic, and onion. On the other bowl, there is the slurry soup of ground liver, and she prepared an additional soup.

Then I heat the cooking pan and put oil and spices.

Once the spices are cooked, you can add the pig's brain.

It takes a little while for the slurry to bubble. So just chill for a bit.. Take your time chit-chatting with your tablemates.

When bubbles start popping, that’s your green light. You are ready to go. Go ahead and dip that “puso” right into the bubbling tuslob buwa.

My family really enjoyed it, and we asked for another hanging rice. All in all, we consumed 20 pieces of hanging rice plus the 10 pieces free.

There’s really nothing special about cooking it because it’s actually very easy to do. But the joy of being with your family or friends while taking turns dipping into the bubbles or buwa is something that will be remembered.
