Food is not just a means of filling the stomach in people's lives, but also an essential part of joy, culture and social relations. Especially in urban life, street food or roadside food has acquired a unique feature. Walking on the streets of a busy city, one can see phuchka, chatpati, jhalmuri, singara or pitha shops. Since these foods are available at low cost, they attract everyone from the common people to students and working people. Not only that, the daily hard work, struggle and self-reliance of street food vendors play a special role in the economy of the society. As a result, street food today is not just food, but also an essential part of our culture, economy and social life.

What kind of street food is available in your city or area?

The world of street food in my city is actually a colorful festival. Every morning till night, various food stalls are set up at various intersections, roads, in front of colleges and universities or at the entrances of markets in the city. The smoke of food, the smell of spices and the crowd of people all combine to create a unique atmosphere.

Phuchka, chatpati, jhalmuri, singara, samucha, paratha-bhaji, egg rolls, chicken fries, noodles, kebabs, ice cream, pitha, curd, lacchi, sharbat – the number of types of food available here is endless.

When the hot, spicy and sour water of fuchka is served in small plates, a line of people standing on the side of the road forms. Again, when a mixture of potato puri, chickpeas, onions, coriander leaves, lemon and spices is prepared in a clay bowl of chatpati, the mouth waters.
In winter, the pitha shops are crowded vapa pitha, chitai pitha, patisapta, coconut-filled dudh pitha these foods are part of our folk culture.Besides, chicken roll, chicken fry, paratha-bhaji, kebab shops become busy soon after evening. They are especially popular with students.

All in all, street food in my city is not just a means of filling the stomach, but it is a part of social culture and joy.

Yes, I have eaten these dishes many times and every time I have had a different experience. Each dish tastes different, but each one has its own charm.

It is difficult to describe in words the sour, spicy and spicy taste that explodes in the mouth when eating fuchka. The mixture of potato-egg-chickpea filling and lemon-spices inside the crispy fuchka is truly amazing. The price is also affordable—30 to 50 taka per plate.

Chattopi has a completely different taste. Made with a mixture of hot potato, chickpeas, onions, chillies and coriander leaves, this dish has an incomparable taste. It usually costs 20–40 taka.

Jhalmuri is a quick-to-eat dish. It is made by mixing muri, chanachur, almonds, onions, green chillies, and mustard oil. It costs 15–30 taka.

Singara, samucha are fried in hot oil. They are crispy and crunchy. The price is usually 5–10 taka each.

Paratha-bhaji or kebab is a bit heavy food. Many times, many people eat these at night in hotels or on the roadside. The price ranges from 40-100 taka.

In winter, the pleasure of eating steamed pitha, milk pitha, date molasses pies—these are indescribable. The price ranges from 20-50 taka.

What did you learn about the shopkeeper's struggle?

The story of the struggle of street food vendors is truly inspiring. They go to the market every morning to buy potatoes, onions, spices, oil, muri, and flour. Then they set up temporary shops on the roadside. No one has a shop, only a trolley or a small table is their business.

Some aspects of their struggle include having to cook and sell standing in the scorching sun, rain, or cold in winter. Every day they make a small profit. Sometimes when the price of raw materials increases, the profit is far from it, and the costs do not increase either. Sometimes hawkers are chased off the streets. They also have to fight against police harassment, extortion by hired thugs. With this small income, they have to pay for their children's education, household expenses, and medicines.

Seeing all this, I have learned that their daily life is actually a silent battle. Yet they do not give up. They smile and make quick work of themselves. A lot can be learned from their patience, hard work, and struggle.

What do you think about the importance of these small street food businesses in our society?

In my opinion, these small street food businesses are very important for the society.

★Economic importance – This business can be started with little capital. Thousands of young people are earning a living through this. This is creating employment, poverty is reducing to some extent.

★Affordable food source – Common people can eat their fill with very little money. Especially for students and daily wage workers, these are a place of hope.

★Preserving culture and tradition – Foods like pitha, fuchka, chatpati, jhalmuri are part of our food culture. These businesses are keeping them alive.

★Social communication – Fuchka shops on the roadside are actually not just food shops, but also a place for friends to hang out, a place for small social gatherings.

★Participation of women entrepreneurs – Many times, it is seen that women are also running their families by doing these businesses. As a result, this is also a way of empowering women.

Overall, I would say that the street food business not only enlivens our cities and societies, but is deeply intertwined with the economy and culture. Although it is small, its impact is huge.
