Cake of beans
BEAN CAKES .
Bean cakes are eaten and made in different countries which includes Togo Nigeria, Caribbean, Brazilian, Ghana and some other countries.
Known as acrajé in Brazilia, Koose in Ghana, Àkàrà in Nigeria; the difference in names does not make their primary ingredient any different, beans.
Bean cakes are made with black eyed beans; white and red beans.
It is a proteinous meal also filled with vitamin and fat and oil. All these makes it easy to provide the body with easy tissue repair, energy and antioxidants.
It can be eaten as snack in the afternoon and night; or breakfast. Bean cakes can be paired with bread, custard, solid pap.
It is a traditional dish which can be traced way back to the ages and is not to be forgotten in some festivals and occasions
Though making this cake has different versions based on the countries, below is a simple recipé to prepare it for two people.
Ingredients:
3 cups of beans
4 Scotch bonnets
1 ball of onions
Crayfish
Palm oil or vegetable oil (enough to deep fry)
Seasonings
Salt
Water
Procedure:
- Get your beans and soak with water for a while, long enough to make it soft cane
- Gently rub them against each other in the water to remove the shafts and sieving out.
- Put the already white peeled beans in side the blender and blend it to paste while adding water.
- Get the peppers and crayfish and mince it.
- Pour the minced peppers and crayfish into the ground beans and stir it together.
- Get your oil on the fire for heating.
Slice your onions into the bean mixture and stir together. - Add seasonings and salt to taste.
- By the time the oil is heated and hot, gently scoop your bean paste into the oil and fry.
- When you're sure they're held together, gently turn them over to fry the other sides.
- Do this till you have all paste fried into golden brown balls while delivering them into a drainer to get rid of excess an dripping oil.
- Serve and enjoy as lone dish or with custard or any side dish of your choice.
