Eggplant sauce with cocoyam
Pleasant day steemians,
How are you all doing, what are you having for lunch, for me I thought of sharing with you what I am having for lunch, guess what it's, Eggplant sauce with cocoyaam.
I am going to show you steps involved in preparation of this yummy recipe
Ingredient
*Cocoyam
*Eggplant
*Palm oil
- Seasoning cubes
- Salt
*Water
*Crawfish - Tomatoe peast
*Utasi leaf ( local vegetable leaf)
*Fresh pepper
*Onion - Spices .
Step one: wash your cocoyam and put them inside a pot next set on fire to start cooking
Step two: wash your eggplant thoroughly with a runny water, peel off the back, I prefer to cook mine with it peel . Add water to the brim then set on fire to cook for up to 5minute once it's soft pour into a local mota and pound until you achieve a thick peast.
Step three: set your already washed and dry pot on fire ready to make your sauce .
First ,pour in your Palm oil, allowed to get to a certain degree of hotness and then add your onion and stir for a while. Again add in your tomatoe peast and continue stirring until you achieve a good taste. Add eggplant peast and continue stirring .
next add your seasoning cubes, salt to teast, a little amount of water, and stir. Go in with your already pounded crawfish and Keep stirring lastly ,Go in with your already sliced otasi leaf vegetable by this time your cooking cocoyam is already soft and ready. Strain out the water and allow to cool a little before serving, Bring down your made eggplant sauce ready to eat.

This look delicious, It's been awhile I last tried this my favorite meal during pregnancy i think i like this recipe of yours with green leafs I will try it when next i make egg plant sauce
