I share my Thai sweet sticky rice with mango (Kao Niaw Mamaueng inThai)
I try to cook it even though it's not in mango season, but I can find one specy of mangoes, name's Samruedu mango which it means the three seasons in Thai.
🐱🍃 here is my recipe.
Ingredients;
- raw sticky rice (soaked in water over the night) 1/2 kilogram.
- coconut milk 2 cups
- 2 pandan leaves (if you don't have, just skip)
- palm sugar 3/4 kilogram (or how much sweet as you like)
- 2 teaspoon of salt
- 1 piece of alum. (Just for making rice seeds become a little bit transparent)
- ripe mango (as much as you like)
How to make it:
- rinse rice to clean and scrub with alum then soak up over night or more than 6 hours.
- stream soaked rice by lay pandan leaves under rice until well and soft.
- During you are waiting for rice is done, you have to prepare sweet coconut milk by mix up palm sugar, coconut milk, and salt together.
- When rice is done, this is very important step: you have to put hot stream rice into mixed sweet coconut milk and mix them well and cover with the lid around 10 minute, and back to stir it again to let rice absorbs sweetness.
- While you are waiting rice well aborbs, you have to prepare savory coconut milk sauce by heat up 1/3 cup of cocinut milk and 1 teaspoon of salt.
- Serve rice with sliced mango and dress with savory coconut sauce.
