African special cuisine: Ekpang Nkuwkwor

How are you all doing,Welcome to another episode of my African delicious meal , I'd be preparing Ekpang Nkuwkwor a delicious meal you'd love to try .
Ekpang Nkuwkwor is a traditional meal mostly eaten by people from cross River & Akwa Ibom state in Nigeria. It is a special dish made from water yam and cocoyam wrapped in sweet potatoe leaf, ugu leaf and cocoyam leaf . Ekpang Nkuwkwor is not just a meal it's an experience though it takes time to prepare, the teast is worth all the effort . It's also a male made during our special occasions like traditional marriages or festivals.

Cocoyam
Water yam
Bone stock
Sweet potatoe leaf
Scent leaf
Periwinkle ( mmfi)
Cow protein ( optional
Red oil
Fresh pepper
Crawfish
Onion
Smoked fish ( Ekpai)
Salt
Seasoning cubes ( Maggi)

The making process
During the wrapping of this Ekpang nkuwkwor there are usually some family members especially the women who is likely ready to assist, now the idea is that during this process stories are told histories are brought to play, more gist and jokes are told so in a sentence I'd say that the making of Ekpang nkuwkwor brings families together 😊 it's always fun now let's begin.
In a big tradition pot, I went in with my red oil and periwinkle and so the wrapping process begins
Before now my cow meat stock was already on fire it's basic to add already boiled water on already cooked meat stock in order to fasten the cooking process.
Next, after wrapping I go in with my meat stock
And another periwinkle I mean what's Ekpang Nkuwkwor without periwinkle. Next I added my pepper, onion, crawfish, salt, Maggi, fish .. note please that this process are done while your pot is not on fire.
Since Ekpang Nkwukwor is a traditional meal, it's often cooked on charcoal fire ( firewood)
At this point our delicious Ekpang Nkukwor was almost ready so I went in with more meat stock then I used my knife to cut the Ekpang into smaller pieces right there while my pot was still on fire so I added more oil and finally added my scent leaf and continued to stir until it's was properly mixed
As I had mentioned earlier this meal brings families together, here is I and my family already declined on our seat with our spoons ready to din together
