"Recipe of the Day, Week No. 67: (Bitter Gourd Stir-Fry with Onions and Spices")"

This is me @isha-rehman. I hope you all are doing great healthy and happyToday I’m very excited to share with you a very traditional and healthy recipe that I personally love Spicy Fried Bitter Gourd known in Urdu as "Karela". Bitter gourd may have a strong taste but with the right spices and method it becomes a delicious and nutritious dish

Let’s dive right into the recipe.

Ingredients:

3 medium sized bitter gourd
1 medium onion
2 tablespoons oil
1 teaspoon red chili powder
½ teaspoon turmeric powder
½ teaspoon cumin seeds
Salt to taste
1 tablespoon lemon juice
Water as needed

Method:

Prepare the karela:

Wash the bitter gourd peel them lightly and cut them into thin ring. Sprinkle with salt and let them sit for 15 20 minute. This step help reduce the bitternes.

Rinse and squeeze:

After 20 minutes rinse the karela well and squeeze out excess water.

Frying the onion:

Heat oil in pan. Add cumin seed and sliced onion. Fry until golden brown.

Add karela:

Add the bitter gourd slice and stir well. Cook on medium flame for about 10 minute.

Spice it up:

Add red chili turmeric and salt. Mix thoroughly.

Cook until crisp:

Fry for another 10 12 minute on low heat until the karela become crisp and golden.

Your spicy fry karela is ready to serve.You can enjoy it with roti or rice. It’s not just tasty it’s also great for digestion and blood sugar control.

No wonder I don't taste the bitterness in them every time I had banana leaf rice. Which one is better? To use salt or to blanch them?
