"My Recipe of Cooked Efere Etighi (Okra soup)"
Welcome to my blog am a lover of good meals I spent most of my time in the kitchen making different meals for my family and most of them are local cuisine that represents out culture and heritage i also learn and recreate other food from different countries as i like to try new recipes, so my today's recipe is efere etighi (okra soup) okra is sometimes fried but in this recipe it will be cooked.
Ingredients
• okra
• oziza leaf
• crayfish
• palm oil
• fresh pepper
• seasoning cubes
• fish
• chicken
• cow skin
• bush mango seed
• periwinkle
Step1
I started by washing my chicken, fish, periwinkle and cow skin into a clean pot, then blend some scotch bonnet pepper poured it into the pot added some seasoning cubes and salt then I cook in a very minimal water.
Step2
While my ingredients was still cooking I cut my okra and roughly blended it then set that aside.
Step3
After 10 minutes of cooking my ingredients I added the amount of water suitable for the soup and let it cook again for 3 minutes when it came to a boil I poured some palm oil into it and continued cooking.
Step4
After another 2 minutes of cooking I poured in my blended bush mango seed together with crayfish stirred it well cover the lid and let it cook for just few seconds.
Step5
After few seconds i went it with the okra I earlier set aside stirred it properly to loosen up, then I washed and sliced my oziza leaf as the final ingredients.
Step6
Lastly i poured in the sliced oziza leaf and stirred evenly to mixed up then my okra soup was ready.
In my culture this soup is mainly paired with solid made from yam, casava, or plantain we call it swallow because we mold the solid dip it in the soup and swallow it, sometimes it's can be used as sauce to eat white rice.
