"Recipe of the Day, Week No. 52"//Biryani recipe with Lahori style
I am really happy to participate in this context and I would like to share a detailed recipe of chicken biryani with Lahori style with step by step description!
Step 1:-
• In this step first I take sliced onions in a pot in which I have to cook biryani and then I added some oil for cooking in onions.
• I let onion to be light brown in colour as you can see here.
• I added some herbs for giving a yummy aroma to my dish and those herbs including 5-6 cinnamon sticks ,5 cloves but adding herbs is optional that's why I have not added them in ingredients.
• Now I added ginger garlic paste in it in same quantity which I mentioned above.I let it cooked or fried for 1 minute.
Step 2:-
• Now I added chicken prices in it and let it fried for 5 minutes after that I added 6-7 round red chilli which gives unique aroma to dish.
• I already cut tomatoes in cube shapes which I added in pot because tomato itself have water in it so when I add them then it prevents other ingredients to stick with pot.
• I added all spices including red chilli,green chilli and salt in it and let all these ingredients cook for 5 minutes with each other.
Step 3:-
• Now I added lemon juice in this way one by one by cutting one lemon into two parts from centre and then I added 6 lemon juice in it because it gives sour and yummy taste to biryani.
• Biryani masala or biryani spice you should add surely of any company or brand for adding real flavor of biryani and giving actual richness to your dish so here I am adding.all species that's why 1 small pack of this spice is enough.
• Tamarind have its own flavor so this is also important to give more rich flavor to biryani so here I add it by dipping it in water and by extracting it's flavours.
Step 4:-
• I added around 1.5 cup sour yogurt in it for giving a yummy and sour flavor to dish.
• Mint leaves I am adding after adding water and when water gets boiled then I added rice and then at this stage adding 2 cups of mint leaves give more flavor to your dish.
• This is you can see the stage at which I have added mint leaves in my dish.Now we will cook it at high flame for almost 6-7 minutes.
Step 5:-
• This is clearly seen that there is little quantity of water remaining in rice so it's a time to cover it with help of a lid for giving it dum(Steam) because dish will be ready when we will cook it at medium flame and by giving steam.
Final look:-
This is final of biryani of Lahori style....
Biryani is actually made by layering method in which we put one layer of one rice and at top 1 layer of chicken curry and then we repeat it in two to three layers but this is sindhi style of making biryani.
In Lahore many people make biryani with this style.....
Difference in Sindhi biryani is that it gives different flavours in every bite.
While Lahori biryani have a special taste and it's taste remains homogeneous throughout each bite...
So this is beauty of Pakistan most famous dish that how people of different province enjoy it in different ways and with different cooking styles....
