Recipe: Mutton Biryani

Hello Everyone!!!
I hope you all are good and doing well. Today I'm sharing a very popular traditional recipe of Biryani. In Pakistan Biryani is very popular and in all regions its made with slightly change of spices. Biryani is popular in some other countries too. You can make Biryani from different meats like chicken, beef, mutton and fish. In my family mostly i make chicken Biryani but on occasion or at gatherings I make mutton Biryani. Today I'm making mutton Biryani.
Let's move towards the recipe;
Ingredients :
Mutton 1kg |

Rice 750g |
Chilli powder 1.5 tbsp |
Black peppercorns ½ tsp |
Cumin seeds 1 & ½ tsp |
Green cardamom 3-4 |
Black cardamom 2 |
Cloves 4-5 |
Cinnamon sticks 2-3 |
Coriander powder 1tsp |
Turmeric powder) tsp |
salt 1 & ½ tsp or to taste |
Ginger garlic paste 1 & ½ tbs |
Green chilli paste 2 tbs |
Yogurt 4 tbs |
Tomatoes sliced 2 medium |
Oil 1cup |
Food color 1/2 tsp |
Making :
Biryani is made in three steps, mutton curry making, boiling rice and Assembling mutton masala with rice.
Step 1:
- Whenever I make Biryani from beef or mutton my first step is to tender meat by boiling it in water. Normally it takes 40 minutes to tender without pressure cooker.
When mutton get tender ,add oil in a pan then fry mutton in it .then add garlic ginger paste and sauté it for few minutes.
Add all spices in it and sauté it until spices smell comes out.

- Add tomatoes and yougart in it . Then add green chillies, fried onion in it and cover the lid and cook for 5min. When oil separate from mixture means it done.

Step 2 :
Soak rice for 30 minutes after washing it properly. Boil water by adding salt bay leaves, Cuminseeds and cardamom.
Add soaked rice in hot water and boiled it until rice cooked 90%. Then strain excess water from rice by using strainer.

Step 3 :
Final step is just assembling ,make first layer of rice then place mutton masala on it then add rice lyer then mutton layer and at top rice .
Add oil over rice to give it shiny color and add food color on it. Now cover the lid and cook it on very low flame for 5-10min.

- Mixed rice and mutton evenly so all spices mixed well. Biryani is ready to serve. Enjoy this Biryani with salad and yougart sauce.

Serving size: 7-8 person
Biryani is a complete meal if it served with salad. It has meat that provides protein building blocks of body, different minerals and vitamins that are essential for different body functions and rice provides carbohydrates fule of body. Its used as main course of a meal.
