Today, I am here with a new food blog and I welcome you all to my Steemit blog. My food blog today is about liver. This liver is very famous in my city and around my village. It is very tasty and it is very enjoyable to eat. But the way to cook liver, which is done correctly, makes amazing liver. The most famous liver in my area is the liver of Kalabagh. Because all the chefs who cook liver in Kalabagh have a very simple style of cooking liver. They add very few ingredients to it, but the taste is so delicious that people keep eating and their stomachs are full, but their hunger does not go away. The chefs of Kalabagh cook such delicious liver. When I ate this liver, I enjoyed it very much. Here I also want to write that liver, which is a street food, has taken the form of a street food. The street food has taken on a different form because there are now dozens of food shops in Kalabagh where liver is cooked and people come from far away to eat this liver. My house is about 40 kilometers away from Kalabagh, so you can imagine that I traveled 40 kilometers to go to Kalabagh to eat this liver.

When I ate the liver, I asked the chef what ingredients he uses in the liver. He told me that he uses very few and simple ingredients to cook the liver. All those ingredients are available in every home and kitchen. Similarly, no expensive spicy ingredients are used. However, those who want to eat spicy food can add their own spices. However, the time taken to cook the liver is different. The chef who made the liver told me that if the liver of a chicken, meaning chicken liver, is being cooked, it takes less time. Buffalo, cow and other large animals take more time to cook the liver. Chicken liver, sheep, goat and goat livers take very little time to cook. Similarly, I asked him where do you get such a large quantity of liver because there are dozens of shops here where liver is cooked and sold. He said that he goes to the butchers. We place orders and whenever the butcher slaughters animals during the day, he keeps their livers for us. So I asked him various questions about cooking livers and he gave me very loving and compassionate answers. Livers are a very popular food that is also being sold in fairs and markets. Wherever there is a rush of people, people gather in large numbers to buy and sell. In these places, shops selling cooked livers are decorated. Similarly, there are shops selling livers on the market or in a specific place.

The street food chef told me that the ingredients needed to cook liver or the ingredients they use are as follows: First of all, the liver can be chicken liver, goat liver, buffalo liver or cow liver and it is first washed well. Apart from this, tomatoes, green chilies, red chilies, ground salt and hot spices are used to cook liver. Some people also use black pepper instead of red chilies and similarly, the salt that is available is used according to taste. Some people eat more salt and some eat less. Similarly, if you want to make liver more spicy, black pepper or red chili and green chilies are added in large quantities and then water is added to it. These were the ingredients that are used to cook liver.

The method of cooking liver

The method of cooking liver is very easy for any animal and there is only one way to cook all livers. The method that the street food chef told me to cook liver was like this. The chef told me that the liver is first cleaned well, then the liver is cut into very small pieces. When the liver is cut into small pieces, it is then boiled in water, it is drained and the water is poured into a large pot on top of a large tawa, which you can see in the picture. If you are cooking one kilo of liver, then you have to add about two kilos of water to it and when you add water to it, you have to add the liver to it at the same time. You have to let the liver and water dissolve well. When you see that the color of the liver has changed, then you have to add spices to it. Add salt to taste, add red pepper to taste and then fry it well. And like this, when you keep frying, the water will also dry up and when the water is half, then you have to add tomatoes in it. When you add tomatoes, you have to add green chillies in it. In this way, when the water of tomatoes and chillies and green chillies comes out, then the taste of all these things will be added inside the liver. In this way, you will see that the water that you had added is now drying up. As soon as the water dries up and the liver is well cooked, then you have to add half a kilo of water more because you have to make soup and the soup should be a little thick. We say that the soup of the liver should be thick. The tomatoes should be visible on top. Capsicum should also be visible, which will be green in color. In this way, the color and thickness of the liver that you are seeing in the pot will be exactly the same as the liver will be ready. If you are cooking chicken liver, then it will take about 20 to 30 minutes. It takes about 40 minutes to cook lamb and goat liver, while it can take more than an hour to cook cow and buffalo liver. This is a beautiful and easy way to cook liver.
