Cooking vlog 8|| Edikang Ikong Soup Recipe

Hi guys!

Welcome to my food vlog today, and I'm going to show you how to prepare one of our native soup, some people identify it as vegetable soup or ugu soup but we called it edikang ikong soup in our native language.

It is made of two leaf which is the water leaf and the pumpkin leaf (ugo) leaf with a lot of palm oil. This food is eaten with any swallow of your choice.


Benefits of pumpkin leaf


It has a lot of health benefits, it is rich in vitamin A and C a good source of calcium, iron, and fiber which helps in building healthy well-being.

It contains fiber that helps in digestion, it helps in building immune system, improves my he skin health and it is a good source of antioxidant.


Uses of Pumpkin leaf


It can be use for preparing different dishes such as ugu soup, melon soup, okro soup, okpono soup, sauces ams lot more.

Now that you have a little clue on what really is this pumpkin leaf, let's see my ingredients and how I prepared it.

Ingredients


  • Ugu leaf
  • Waterleaf
  • Meat
  • Fish
  • Palm oil
  • Crayfish
  • Pepper
  • Seasoning cubes
  • Salt
  • Periwinkle
  • Onion
  • Clamps
  • Snail.

Preparation techniques

  1. Washed and seasoned meat and steam it till done. I like cooking my meat probably especially when it has to do with beef.
  1. Once the meat is almost done, I added the clamp, snail and periwinkle to the pot and allow it cooked for about 3mins.

  2. Added crayfish and pepper to the pot and allow it simmer.

  1. I washed and added my smoked fish to the pot

  2. Added palm oil to it

  3. Added onion and allow it to simmer

  1. Once cooked I opened the pot to add the leafs

  2. I added the chopped waterleaf and seasoning cubes and allow it to cook

  3. I didn't add any water but the waterleaf has lot of water which helps the soup to cooked properly.

  1. I added the vegetable leaf (ugo leaf) and palm oil then cover the pot for it to cook

  2. I turned the pot to be sure everything is well mixed together.

  3. Finally the soup in done and in a plate.

It was indeed a delicious meal, I enjoyed mine with fufu swallow, you can always choose any swallow to eat it with.
