Welcome to my blog today and I'm going to be showing you how I prepared African jollof rice with veggies.

So last week was really busy for me and I've never been that very busy but then I enjoyed the activities throughout the week.

If I want to write about my last week I think I'll spend like 2 weeks to write about it in different areas but then let me use this opportunity to show you how I prepared African jollof rice during the weekend.

So we had a 3 days convention so I cooked for my family in those 3 days but I actually want to show you how I cooked rice in one of those days.

African jollof rice is one of those food in Africa that everyone like to eat exception of those ones that have health challenges that requires them not to eat it aside from that, African rice is eaten by everyone.

Ingredients

  • Rice
  • Tomato
  • Vegetable oil
  • Spices
  • Seasonings
  • Pepper
  • Veggies
  • Crayfish

So the first thing I did was to parboil my rice, of course I did this to avoid the rice remaining sticky or sandy.

Then I seasoned the chicken, steamed it

I started with frying my tomatoes for the rice, making it tasty for the rice.

Here, I added my chicken stock and some spices to bring out the taste.

I allow it to boil very well before adding the rice

Finally added rice and stir for ingredients to be evenly distributed in the pot.

I covered the pot with foil paper so that it will be heated well.

I removed the foil paper when the rice is done so as to add veggies.

I started with adding onions to the pot

I added carrot, green pepper, green beans

I stir it and my rice was ready to be to be dished

One thing I like about this rice is that the veggies makes it very nutritious and healthy to eat. It has a lot of health benefits, the fresh tomatoes, carrots, green beans, green pepper contains vitamins, which helps in building the immune system. While the spices I used contains antioxidants, anti-inflammatory which also helps the body system to fight some certain conditions.

So looking at the ingredients you used in cooking is very essential.

It was really delicious and we all enjoyed the rice. You know one things in cooking Nigerian meal, you need to get your spices ready and it has to be the one that will go in well with your food.

The spices has to be moderate and of course you know too much of it will spoil the taste. The spices I used really worth the stress.
