Come with me to my hometown, Uyo Akwa Ibom State of Nigeria. Let me introduce you to a delicious soup that you may at first got scared of the name but case what? Is not about the name, it about what the soup have in stock for us and lovers of traditional cuisine.
Here you are going to see how I was able to turn a leave that was once bitter as the name implies to a delicious soup that is loved by everyone including the kids.

Before that let me tell you a little story about bitter leaf soup.
Story behind bitter leaf soup.
There was a woman who lived in my hometown, her name was Iquo (Ibibio name) she was known for her cooking styles and techniques. People usually travel from far distances to eat her food and there came a day where a cooking contest was organised.
Everyone were asked to cook something different from the usual food they are familiar with.
As at that time bitter leaf was not eaten by anyone in the village because no one new how to wash out the bitter taste from the leaf and make it edible.
Everyone tried their new recipes and Madam Iquo did something very strange, she cut the bitter leaf and came out with a very delicious soup that kept everyone talking about it for years and madam Iquo was asked to teach every other women how to cook this soup.
From that time onward the soup became a must cook soup in important events in the community including traditional marriages.
This soup is used in welcoming visitors because not everyone can cook it because of the bitter taste till date.
Anyone who knows how to cook bitter leaf soup very well without the bitter taste is rated as a top cook.
I cooked my bitter leaf without the bitter taste will you say I am a good cook?
Ingredient needed for the soup
Bitter leaves
Dried fish
Onions
Fresh pepper
Seasoning cubes
Salt
Palm oil
Stock fish
Meat
Waterleaves
Melon
Perewinkle
Greyfish
Directions for preparation.
I added greyfish, and later followed by melon and some seasoning soup.
I added salt to taste as well as fresh pepper.
The last thing I went in with was the washed bitter leave which at this point was no longer bitter.
After adding the leaf, I allowed it to cook for 2 minutes and put off the fire.

This expression was made by my children after enjoying the delicious bitter leaf soup.

I used a total amount of ₦9500 that is approximately 47.5 steem to prepare this soup and the preparation was time consuming because of the washing of the bitter leaf and the rest of the things. But the taste and health benefits of this soup is worth the time spent.
Benefits of bitter leaf soup
The leaf of this soup being the main ingredient is very rich in antioxidants that helps protect our cells against damage.
Since bitter leaf is rich in vitamins and minerals, we can rightly says that it can boast immune system.
This soups support digestion and help regulate blood sugar.
The leaf of this soup as been used in my area as traditional medicine.
This soup is loved by everyone in my community and as such is served in events like marriages.

Thank you so much dear friend for taking time to go through different recipes from my country. We have a lot of them here and with rich nutritional values. To convert the leaf into something that is no more bitter, I pound and wash it thoroughly. I used over 30 Minutes in washing and rinsing it and continue to add water to it. I taste it after every washing steps so as to know when the lead is no more oore bitter.
Yes every recipes as a story and that is one of the stories a learnt about bitter leaf soup in my community.
Not all our meals are call soup, it may just be that the ones you come across are the soups. We have so many varieties of soups. We turns almost all the leaves to making soup with a special techniques in doing so.

Bitter leaf soup was one of those soup I was always hesitant of cooking but through continuous practice, it has become the soup that I cant do without in month of 30 days.
My children really enjoyed it and then gives out their praises "Mummy's food is the best".
Thier expression gave me a kind of satisfaction that I made a delicious soup.

Damn. This is so detailed and I love the sampling on the video. You have a good cutting skill. I barely know how to cut like this. Anyways, I love the ingredients you added to this soup. Meat, dry fish and stockfish are way classic ingredients that would add to the taste and sumptuousness of this meal. I love melon with a touch of bitter leaf. Thanks for sharing. What a great chef we have here, I think I have heard this story back then, madam iquo is needed a wonderful cook, now you are the second madam iquo hahahaha. The soup looks appealing remember my house is not too far I'm interested in the soup.
