Thank you so much dear friend for taking time to go through different recipes from my country. We have a lot of them here and with rich nutritional values. To convert the leaf into something that is no more bitter, I pound and wash it thoroughly. I used over 30 Minutes in washing and rinsing it and continue to add water to it. I taste it after every washing steps so as to know when the lead is no more oore bitter.
Yes every recipes as a story and that is one of the stories a learnt about bitter leaf soup in my community.
Not all our meals are call soup, it may just be that the ones you come across are the soups. We have so many varieties of soups. We turns almost all the leaves to making soup with a special techniques in doing so.
You will come across other recipes dear friend as you continue reading our traditional cuisine in this learning challenge.
I would be glad to be of help when you are ready to try the bitter leaf into a delicious soup. Not everyone can successfully do so but those who determined to do so comes out victorious.
