Recipe: Blueberry cookies
I've made this before and made it again!
It's great having recipes you know you love, and this one I think is cooler than normal blueberry biscuits because of the way it makes the dough blue/purple!

The recipe I use is from Cookie Dough Diaries, I think it's nice and clear, and more importantly to me, quick!
Some blueberry cookies freeze the berries so that they stay intact in the dough, but I know this recipe also uses frozen ones, but I have always used them fresh!
The ingredients
- 105 grams butter
- 200 grams granulated sugar (I adjusted it to 180 grams)
- 1 egg
- 1/4 teaspoon vanilla essence
- 3/4 teaspoon salt
- 1 teaspoon baking powder
- 250 grams plain flour
- 2/3 cup blueberries
The steps
I microwaved my fresh blueberries for about 30 seconds (in 10 second bursts), and carefully mashed it. After this, I placed the bowl of mashed berries in the fridge for about 10 minutes just like the recipe details.
After this, I beat together the butter and sugar until it was light and fluffy using an electric whisk. When this was ready, I added in the jam-like blueberries and combined this in completely, adding in the egg and vanilla essence.
Now it was time to add in the (sifted) flour, salt and baking powder, mixing until a dough formed. I used 2 baking trays and put 1 tablespoon worth of dough balls evenly spaced out.

Then I baked them at 175 degrees Celsius for about 13 minutes, I had an issue with the lower tray (I put both in) but pushed past it!

I had about 12 total from this recipe, despite it predicting 20 total, I must have made them bigger.
I love the colour of the biscuit dough @jen0revision. I wonder how strong the taste is.
