Ingredients
- melted 1 tbsp unsalted butter
- 1 large egg
- 1 tbsp milk
- 1 tablespoon almond flour
- 1 tablespoon coconut flour
- 1/8 teaspoon baking powder
- (Optional) poppy seeds
- 100g minced lean beef
- a quarter teaspoon of garlic powder
- a half teaspoon of dried oregano
- 20 g sliced cheddar cheese
- a quarter of a baby cos lettuce
- sliced 1⁄4 of a tomato
- 1 tbsp mayonnaise (whole egg) (new ingredient)
- 1 tsp mustard (dijon)
Method:
Preheat the oven to 160°C/180°C/350°F/Gas mark 4 (fan forced).
Combine the butter, egg, milk, almond and coconut flour, and baking powder in a mixing dish. Stir with a whisk until smooth and well incorporated.
Lightly grease a 12cm/4inch round ramekin/s, then pour batter into them and smooth the tops.
Bake for 15-20 minutes, or until the bread surface springs up when lightly touched rather than sinking in, then cool slightly.
Make your burger patties while the buns are baking: combine the beef mince, oregano, garlic powder, and salt and pepper in a mixing bowl. Make circular patties out of the mixture (about the same size as your ramekins).
Fry your patties for a few minutes in a pan over medium-high heat on each side
Once the pan has been flipped, place the cheese slice on top and reduce the heat to low, covering the pan with a lid to allow the cheese to melt.
Turn out the bread by loosening it from the edges of the ramekin with a spatula.
Cut your bun in half horizontally and spread mayonnaise on top before layering lettuce and tomato on top.
Place your burger patty on top of the bun's top. Serve with steamed low-calorie non-starchy veggies or a crunchy green salad.
